Ingredients of beer

This law sets rules about what can go into beer sold or made in Missouri. Beer must be made from malt or certain substitutes like rice, grains, beans, sugar, or molasses. Things like honey, fruit, herbs, and spices can also be added. Alcohol-based flavorings can be used, but only up to a certain limit — they cannot make up more than 49% of the beer's total alcohol, and for stronger beers (over 6% alcohol), flavoring alcohol cannot make up more than 1.5% of the total volume.

311.490. Ingredients of beer — . — No person, or engaged in the brewing, or sale of beer as defined, in this chapter, or other intoxicating malt liquor, shall use in the manufacture or brewing thereof, or shall sell any such beer or other intoxicating malt liquor which contains ingredients not in with the following standards:

(1) Beer shall be brewed from or a , which only includes rice, grain of any kind, bean, glucose, sugar, and molasses. Honey, fruit, fruit juices, fruit concentrate, herbs, spices, and other food materials may be used as in beer;

(2) Flavor and other containing alcohol may be used in producing beer, but may contribute to no more than forty-nine percent of the overall alcohol content of the finished beer. In the case of beer with an alcohol content of more than six percent , no more than one and one-half percent of the volume of the beer may consist of alcohol derived from added flavors and other nonbeverage ingredients containing alcohol; and

(3) Beer, intoxicating malt liquor, and , as defined in this section, shall not be subject to the requirements of 1 of section 311.332 and sections 311.335 and 311.338.
